Soup is one of the most comforting food that you can have. It can play the part of a first-course meal or be a complete meal in itself. The versatility of the soup depends on your mood. However, the versatility of soup does not end here. The best part about this meal that brings comfort to your soul is that you can make it using whatever is available in your fridge.

Today, we made mushroom soup. A lot of places serve really heavy mushroom soup that has a lot of cream, however, the one that we made at home is equally delicious if not more and has no dairy involved. This is a simple gharelu mushroom soup, which will blow your mind.

So without any further delay, let’s dive right into the recipe.

Mushroom soup recipe

Ingredients:

Method:

For the first step, we will add butter in a non-stick pan. Immediately after the butter, we will add olive oil. Remember, this has to be done on low flame. We add the olive oil so that the butter does not burn.

Once the oil heats up a little, add onions and garlic. Once the onions turn translucent, that is when we add the mushrooms. Now the mushrooms, once cooked, get smaller in size and leave some water, so don’t be alarmed when that happens.

Once you think the mushrooms are cooked, add flour and saute for 10 minutes. When you feel that you can start smelling the flour, add water. Increase the flame and let it boil. Cover the pan and let it simmer for another 10 minutes.

For the next step, take some of the mushroom chunks out in a separate bowl. Using a hand blender or a regular blender, churn everything together and you will get a creamy mushroom soup. Add the mushrooms back into the pan. We did this so that you get chunks of mushroom while drinking the soup. You can avoid this step if you want to.

Finally, add salt and pepper according to your taste. If you want the soup to be more creamy, you can add half water and half milk to the soup instead of adding just water.
